All you need to do is track the buys/sells and see that people/bots are taking advantage of the arbitrage opportunities and each trade (especially larger trades) causes a chain reaction in the ecosystem. Even with so few trades the ecosystem is creating enough volume for decent returns in the pools, imagine what would happen if we had $500,000, $1,000,000 daily volume.
