Besides anything else usdc has an infinite supply doesn't it? Which means that members of their team hold the minting key. It would leave the system open to exploitation if you could dampen your loss from providing corrupted data via a node by just creating back the value lost. Given I believe that the tokens are destroyed in that instance it wouldn't even cause inflation either.

Just a guess but I think most insurance accountants would rather deal with a stable coin pegged to the dollar. It makes a lot of sense from a book keeping perspective.

I think link would moon like crazy being fully regulatory compliant using usdc and link holders actually owning chain link the company much like UNI. Don't forget, link came out before DAOs became the standard for DeFi, why wouldn't they adapt?
