You have zero idea how to farm or even how nutrition really works
It tastes so bitter because it has fucking antinutrients. Green salat gives nothing to human nutrition. The fact that you planted them in not optimal conditions and that you did not use fungicides made the plant suffer problems to which it responds with more antinutrients thats why it is so bitter.
And no the rabbits wont taste bitter, thats a good idea. Because green leaves are actual food for rabbits and they will detoxify them after eating and nothing will be bitter
For real part substainability you need a huge huge garden and grow potatoes, wheat and beans and them have chickens and pigs
Everything other is a joke
