Most contractors in my industry use a "hybrid" method of paying employees cash under the table, combined with their pay on the books. One example would be $16/hr on your pay stub, then a "cash gift" of $5/hr for the employee. Sometimes that 5 dollar window is enough to put someone over the income level for food stamps/gibs, plus they obviously don't declare it on their taxes so it's a win win for everyone. My former employer payed us that cash gift straight out of the company account (only paid corporate tax, no personal income) which I always felt was super sketchy, but what if you were to pay the employees this bonus money out of saaaaaaay, your wife's personal account who was totally unlimited with the business. You can collect up to $15k as a cash gift before you have to declare it... Thoughts?

gifts from employer to employee are part of the salary and have to be declared and taxed to be legal

I can give my crew a party every now and then, but other than that it's all taxed.

just do it, and if the IRS figures it out (they won't unless someone rats you out) just say oops, I didn't know, and pay backtaxes.
