How can I track my total value over time (ETH and erc tokens) on my metamask account? Etherscan analytics only tracks ETH balance over time but not token value.

Just use blockfolio and manually enter your coin amounts. There are other solutions as well but none built into mm

You can estimate how much the coin costs depending on how much ETH cost at the time, which should be etherscan.
