There needs to be a well known crypto, that is good for payments. BTC is not viable, as fees right now are at $5, which is insane for payments. It's only good as a speculative asset. We all know, that SoV is a meme, and in 1 year when this bubble will pop again, BTC will dump 80%.
The problem with BCH is, that this community despises forks. Every single fork is performing worse than it's original. Litecoin could serve that use case, but they'd need to completely lift off the block size limit, but not let on storing useless data on chain.

BCH fee is very close to LTC's right now but under heavy stress LTC fees would increase due to limited demand of 1MB blocks. BCH has been stress tested and scaled at extremely high transaction volume.

XLM I don't know enough about the volume or transaction capacity to comment.
