Depends on the coins, but most likely they keep the ones that dont sell initially on the exchange as a sell or hold for themselves.

They will sometimes buy the remaining tokens in the ICO with the funds they recieve from the ICO themselves and then hold them / dump over time.

Most whitepapers literally state that unsold tokens are destroyed (i.e. sent to a void contract address that has no method for withdrawing)

This is similar to how ICN is treating their "buyback" program, where instead of dividends to holders, they send a percentage of profits to a defined contract address where they can never be recovered thus removing a portion of the circulating supply.
