Why is 1inch able to give you a discount when buying stETH?

There is no infinite money glitch, though (start with 1 ETH, buy 1.011 stETH on 1inch, exchange all proceeds for 0.99617 WETH on Uniswap - 0.4% loss) but question remains: where is that number from?

Just buy and do not redeem, okay?

1inch probably routes their swap through curve where steth/eth is trading at a slight discount (almost identical to rate offered through 1inch)

Thanks! So a sophisticated /biz/nessman would just buy stETH on Curve outright?

A sophisticated /biz/nessman would be reverse-arbitraging by buying on uniswap and selling on curve to lose as much money as possible on the transaction.

otherwise you'd be fine to just stick with dex aggregators like 1inch to find the best route possible via dexes
