There are clearly some extraneous circumstances the prisoner is trying to account for here

The simple and immediate one being that the guard is troddling along with the bread cart a few feet off screen, he has just dropped the bread as well as his key which he set on the cart for some reason. The prisoner wants to get the bread so he can stuff it under his shirt or eat it quickly before the guard sees.
