Cowswap is an aggregator that also blocks sandwich attacks, so you won't get screwed over trading. Limit orders are simple, you just set the price and sign it, can cancel the order at anytime. It will work with hardware wallets like trezor and ledger.

In general I avoid using Uniswap by itself nowadays. I'll either trade on Cowswap directly or use defillama to choose a DEX.
