Hi /ck/. I have an extra whole branzino fish that'll go meh if I dont use it soon and I wanted to eat swordfish tonight since I baked and ate one yesterday, so I figured I might as well make a soup and eat it over the next few days. I've only ever cooked chicken/vegetable soup and borsht soup so I was wondering if I should do anything specific when making the fish broth, or if /ck/ had any suggestions.
Normally I'd cook some of the veggies in some oil first before making a soup but for this I was planning on just cutting up the fish in to slices and putting everything but the tail in there with some veggies.
I prefer going light on seasoning and enjoying the flavors of whatever I put in my food, so I'm kind of afraid of the fish taste completely overwhelming the soup.
What's available:
> Veggies: Bok Choy, Carrots, Garlic, Green Beans, Brussel Sprouts, Brown Mushrooms, Celery, Corn, Sweet Potato

Usually in fish soup you go the opposite route and rely solely on the fish to create a nice broth with not too many flavourings. Sea bass isn't as good as a bottom fish or something but it can make alright soup. If you want to take the effort you can fillet it, make a good broth from the bones and head, strain, and add the fillets at the end. Just boiling the fish works too if you feel like picking bones on your plate.

Toss the veg in some tomato paste, salt, pepper and a very small amount of olive oil if you have said ingredients. Remove the gills, eyes and fins on the branzino, throw everything on a sheet tray and roast at 400-450 (you know your oven best). Throw it in a pot with some water and just treat it like stock. You know, let it cook down, strain it.

I want to do a full strip and reseason. I know how to season so that's not the issue. It's cleaning the 1/8" thick whatever the fuck is on the outside that's the issue. I've used oven cleaner on CS in the past with decent results, but this is really thick caked on shit. Could possibly be a quite old pan that was used on a wood burning stove so I'm thinking it might be some sort of creosote build up. Pan is a #5 8" BSR skillet. Got it at an estate sale for a couple of bucks from a time capsule of a house. Had to dig through the cabinets and found it. Any tips or methods of cleaning?

It looks like just massively caked on whateveritis. I'll give it a shot this weekend and post before and afters with the other pan I found at the house. The other one is a Wagner 1891 which, while not vintage, is still USA made, not warped, and a nice pan especially for just a couple of bucks.

you want to freeze them as fast as possible.
that means put your freezer at max a few hours before you put in meat.
remember that if you put several kilos of meat at once in it, this is going to make the freezing process much slower, and this is not good. (check the freezer's manual, it should say how many kilos you can put at once)
Also, try to remove as much surface wetness from your meat before you put it in your freezer.
some like to also vaccumseal the meat. this is also a texture killer.
Also, you need to know how to thaw the meat. this should always be done in the fridge, or somewhere quite cold like a fridge. This should be done slowly.
just follow those advices, and I guarantee the meat will suck less. It still is going to be frozen meat so it's never going to be like something never frozen, but it can be quite close
