forgot to add that you want to let the potatoes get somewhat crispy before you go on

cube the potatoes and leave under running water 5 min and then slice the bacon very thinly into strips, throw it into a pan on medium

when the fat from the bacon starts to release into the pan then

add a handful or two of button mushrooms

and then add the potatoes you had rinsed

add half a cup or so of parmesan, stir frequently

add the spinach, reduce heat 25% and allow to wilt

serve with pasta or chicken
