"Moroccan" Stuffed Pork with Cider Sauce and Carrot, Parsnip and Asparagus Faggots.

Stuffing is Date, Apricot, Fig and Raisin, Almond, Pine Nuts, Pistachio and Pumpkin Seed with Ras-el-Nout.
Sauce is reduced Apple juice, Cider, (Lambig), Rice vinegar, Soy sauce, Honey, Cinnamon, and Ginger

I usually mix my spices myself, but here I mixed two store-bought Ras-el-nout. Ingredients :
Black pepper, Garlic, Ginger, Mustard seeds, Cinnamon (10%), Nutmeg, Chili, Paprika (5%), Clove
Coriander/cilantro, Bay leaves, Tumeric, Fenugreek, Caraway , Cumin

I mixed up recipes to make this one and only realise Moroccans probably don't eat much pork halfway cooking...

Here is a better view of the small ones I made on the side. They are cute, don't you think?
There is only caramel and chocolate.
The colour correction make the caramel cream appear a bit salmon and the genoise greenish, they looked better IRL.

Vertical will have to wait until tomorrow.

With a layer of genoise in between each layer and at the base.

Well, I discovered hoisin when I cooked goi cuon for the first time a few months ago (I tried making every dish from the BBC list one by one.)
I looked the wikipedia page but never really thought about looking for other recipes using it. I'll give it a try.
As for making it myself... It sounds like too much complications for the use I have of it.
