you can sort of make oatmeal ice cream in the same way you can make rice ice cream (gelato di riso). Sort of like making a loose rice pudding, but with oatmeal.

basically you can take any plain ice cream base recipe, or vanilla ice cream recipe (omitting the vanilla) and add a pinch or two of saffron to it, depending on your taste.

You could also try adding cardamom to that, to make it more indian tasting, or some cinnamon for a more middle-eastern feel.
