I think he's hilarious. If you watch longer interviews, he seems fully aware how ridiculous his life is, but he's just said fuck it and decided to run with it. If he can sell ants on sticks and live shrimp to rich people for hundreds of dollars, why not?

I think he's absolutely right, tortillas are under appreciated, whereas pasta is seen as a high art. I bet most people could rattle off half a dozen poetic details about making the perfect pasta. I also think he's pretty self aware about what he's doing though, he seems to enjoy messing with his customers.
