It doesn't matter how healthy the lipid is, really, as it's going to be polymerized by extreme heat into a plastic-like coating. Use flaxseed oil, it has a very high smoke point. You can use regular vegetable oil, or even olive oil.

Use a paper towel to apply the oil of your choice. It only needs to be on the cooking surface. You don't need to bother with the handle/underside. Wipe off the excess. Put the skillet face down into a 500 degree oven. It will begin to smoke. THIS WILL STINK. It will smell like something is burning and will likely set of your smoke alarm. After it has smoked for a minute or two turn the oven off and let the pan cool.

Reapply oil with a paper towel. Wipe off the excess (too much oil will create high/low spots on the pan, which collect food debris and are harder to clean). Put it back in the oven at 500. Repeat the process.

Do this about seven times. Now your pan is seasoned. You can cook a steak or chicken or vegetables or whatever on it. Clean it by scraping and scrubbing with a plastic/nylon brush under very hot water. Wipe dry. You don't have to oil it, but you can if you like. It'll look like a black mirror.

Use only wooden utensils. NEVER use a knife on your skillet. Use stainless tongs carefully.
