I'm actually going to give you an honest answer.

1st. Blanch your bones to wash all the scum out of them and to DRAW OUT the sugars. Roasting does carmalize the sugars but most people way over do it which is why your demi/jus tastes burnt as fuck.

2nd Aromatics are key, whatever you want. I've added fennel to a beef stock and it tasted great.

3rd. Don't do the egg raft unless you're doing a consomme, which I would hope you're blanching your bums to draw out the scum anyways if you're doing it.
