Huh? I go by Heston's method (triple cooked). First you boil them a bit, then cool. Next you do a light fry at medium, then remove from oil and cool. Lastly you do a harsh fry at high temp to finish off. There is not a better way to do it at home. I've done it many times, and I imagine it's fairly similar to how fast food fries achieve their end result.

There used to be a great vid on youtube of just Heston preparing his signature chips in a little kitchen, but I have not been able to find that for about 2 years, wtf?

To me, this is the Brit "chip", but are you telling me he's the only Brit who does this?
