I am more of a pastry guy, but I have made bread in stand mixers and noticed some of the smaller Kitchen Aid models struggling to knead even simple brioche, so it's good that you mention it since I do want to get into baking proper bread.

From what you are saying I suppose that my best option is the second-hand market? What should I look-out for since this is my first stand mixer and I am very ignorant when it comes to hardware

If you don't do much then 9-10in seems reasonable to me, a bit on the bigger side but I see it as future-proofing and letting you do more with your only pan.
Last moth I acquire a stainless steel 10inch pan and I absolutely love it, I am starting to regret wasting money on teflon pans because of how easy to clean and durable SS is. Next I plan on getting a small / medium SS sauce pan
