This but unironically.

It’s a waste but it won’t taste like shit.

Take a high pan and add olive oil, fry some onions and adjust with salt/pepper.

Meanwhile using a new pan quickly sear the steak and throw it in the other pan with onion soffritto then cover everything in tomato sauce and some beef stock. A tablespoon of concentrated tomatoes if you want, then slowly bring it to a boil with very low gas.

Cover the pan and let it simmer for at least 1.30 hours checking that the sauce is not retiring too much. If it happens add other tomato sauce/stock.

If everything has been done correctly now your steak should be disintegrated and the fat rendered into the sauce.

Let everything rest and boil some pasta like

>mezze maniche
>paccheri
>pipe rigate
>orecchiette

Once cooked throw the water away and mix them with the sauce for some beef ragù.
