I add a little cinnamon and vanilla, maybe some fruit or berries if I'm feeling adventurous. People who also do this, what do you add when brewing your cold brew?

I'm going to do an experiment with coldbrew, letting it brew for a week straight. What should I expect? I know it will probably be extremely bitter but is there anything else I should get prepared for? How could I fight off the bitterness in coffee with affecting the brewing time?
