So this is something I found in my keto period (don't ask): Feta mixed with vegetables. Feta is unlike most cheeses in that it doesn't clump up when heated. Instead, it just kind of dissolves into a mush when heated or mashed. So far I have made:
-Feta with spinach (extra useful because the vast amounts of calcium in the feta binds oxalate)
-Feta with cauliflower (tastes like Feta and little else)
-Feta with mashed potatoes
As someone who doesn't actually like vegetables, the feta covers the taste pretty well. Any other ideas what I can do with dissolved feta? Carrots maybe?

I wanna cook something with lots of feta in it for dinner. At first I was considering a shakshouka or omelette (maybe with beans or lentils in it too?), now I'm considering making a chicken "salad" with chicken breast, black lentils and feta in it. Thoughts?
