the smoky flavor makes this really great but is not quintessential

you could use lard for the oil and fry cubed cured pork shoulder (hope they sell it in your area?) in it (pic related)

or just go with american bacon, the point is to have a salty meat component there

cumin is not at all necessary, it is tied to that type of bacon -- just don't forget the black pepper as I did when writing down the recipe
