Barbacoa, the origin of the word, refers to slow cooking meat. It doesn't even refer to smoking it - barbacoa is typically cooked in a dutch oven or crock pot. Barbecue isn't exclusively about the process of smoking meat, and barbecuing is distinct from just smoking it. You yourself defined it incorrectly earlier. Southerners invented it and other people took the term to mean other things. As stated earlier, that does not make it a variation of other things, that makes other things a variation of it.
