I accidentally got sliced pork shoulder at the store instead of a whole pork shoulder. I'm planning on cooking it the same way you would a normal pork shoulder (blast of heat and then low and slow). Is it going to come out tough and shitty or like a non-sliced pork shoulder would? Why do stores even sell these abominations?
