The thing at the top is called sambar, it is the red looking soup. Very healthyful and tasty, like a bit sour and spicy soup with veggies.

This is ALL from Kerala. ALL uses coconut. Only coconut. Coconut oil and shavings in so many foods here. You get the paratha and sprinkle some onion on top of the fish fry and use your hands to eat
