Cooking is about making what you can with what you have. You don't need the All-Clad. You don't need the Japanese 1000 fold knife. Just look at what you have in your kitchen and get creative. If the ingredients taste good on their own they'll taste fine together, don't be afraid to experiment.

Either dishwasher salmon is a valid cooking method OR sous vide is total bullshit. Pick one and only one.
