Any of you guys have weird tricks for certain dishes?

I found this out by accident one day, if you're frying chicken, it's almost done and throw a couple pinches of shredded cheese into the oil and then cook it until the cheese melts away and becomes hard bits (I don't think the kind matters I use Cheddar) it makes the coating on the chicken a bit softer and fluffier and I swear it makes the chicken itself more tender, it seems to react with the frying oil somehow I dunno

ever since then though I do it every time I fry chicken and everyone I've ever made it for loves it
