whatever you do, you need to cook it for a long time. Also, it doesn't taste like much (if it's properly cleaned), so cook it in something flavorful, it's great in soups or sandwiches like the italians do.

in soup mostly, though I did have a really good tripe sandwich in florence, tripe was cooked so long it had the taste and texture of fatty beef
