I've got some raw chicken sitting in buttermilk in the fridge waiting to be fried. The problem: I'm not going to be able to fry it tonight like I planned. I'm not even going to be able to fry it tomorrow. Will it be safe sitting in buttermilk for 72 hours, or should I drain it out?

I've never tried to do it, if I really wanted to recreate them though I'd do this.

Brown some taco meat and put in a food processor with a bit of refried beans and puree it. The "meat" in those tacos is mostly pureed soy and meat, so this will be more akin to the real deal than just using ground beef.

Use fresh corn tortillas and put the "meat" in the bottom of them. Try to seal the edges together when you fold it so its like a pita pocket. Now, freeze them.

Once frozen completely heat up your oil. Drop those frozen bitches in the oil for a few minutes. You may have to hold them with tongs and cool one at a time, they have special holders that keep them upright and JITB. Or if you aren't using a deep fryer you can shallow pan fry them, they should stay intact.

Take out, shake off oil drippings, add your two half cheese slices, lettuce, and hot sauce. And done.
