I'm interested in the theoretical rules of cooking - something they teach you in advanced cookery schools - are there books that show the "engineering the dish", food rules or food pairing or something like that? I'm looking for basic and advanced books, if there are any.

Hey /ck/,

I need some of your recipes for tortilla soup. Google isn't being helpful because 90% of the recipes include chicken or beef, even when I search without those terms. I'm specifically wanting to know how to make the broth because I haven't made it in several years and lost the recipe. And if you could help me out here with my request...

>no avocado or tomato chunks

I just want to make the broth and can't remember the spices for it (besides chicken bouillon). Any suggestions? Thanks.
