Tomatoes, potatoes, peppers, squash, and most commercial berries are from the Americas, but plenty of Western counties use these ingredients in their "traditional" recipes. Looking at you Italy, Ireland, England. "Hungarian Paprika" too.

I get that WahKahnDuh was supposed to be isolated, but cross-continental trading has been happening since forever. Peppers grow wild in the tropics across the world now, thanks to birds.

Does skimming the shit off the top off tomato sauce while cooking help with anything? I've heard from my family that it "reduces acid" and from a plethora of others that it does between nothing and something.
