I pre-heat my oven at max (~250) for 15 minutes before putting them in. The potato is already cooked so you're just getting the outside crispy meaning that there is no risk of them burning since you can pull them out whenever you want without worrying about the inside being raw. You can go with 200-220 if you're nervous, might take a bit longer but I suppose theres a lower risk of burning some of the edges then.
