Crispy potato fluff pancake egg breakfast slab

Boiled or steamed potato (leftover is best because you want them to be cold or room temp to start off)
Mash into egss
Mix until mostly smooth, don't use an immersion blender, only as smooth as you can get it by squishing and whipping with a fork rigorously
You want it so it's like a medium batter consistency.
Add salt and pep.
Bonus points for green onion.
Medium to medium-high skillet. 50% butter 50% oil.
Pour in batter.
Cook for a bit DO NOT MIX.
When you can tell that it's beginning to form a good crust on the underside, which you just have to do by gut feeling sort of, take it off the stove a slide it into the oven with the broiler on high to blast the topside.
Again, do not mix.
Take out of oven. Flip onto cutting board in one slab.
Cut into slices like a cake.
Serve with a bit of ketchup of some other breakfast appropriate condament

I did this experimenting in the kitchen, thought it would just be a good use of potato, but the water steams off of the leftover potato, and after you broil the topside it seals it in and it get and it kind of makes the whole thing rise a bit and get all fluffy. The potato starch also lets the underside get really crispy. The texture is amazing. One of my favourite breakfast dishes.
I have burnt the underside a couple times though, it's easy to fuck up since you can't really check it to see you it's coming along without ruining the texture. It needs to seal on all sides to fluff up.

Potatoes are a nightshade, it could easily fucking kill you if it’s not an edible type
Just grow potatoes, I’m decently certain store bought ones are able to be cultivated, here’s a guide for a super efficient potato spawner but there’s much easier ways
