I guess this is the thread to ask. I started pickling some jalapenos last week, just salt and water. The recipe suggested 5 to 14 days to pickle at room temperature. It has been 7 days. When should they be done with the fermenting, ideally? What changes the longer I wait? My goal at the end is to make some hot sauce from it. It's cloudy and has yeast in the water. what do
