That's not even true in a strictly dietary sense, but since this is the cooking board the real hate for that cheap miserable shit will mostly be about the quality in terms of taste and texture.
Buy a big piece of pork shoulder or something if you want cheap meat that isn't ground up ears and assholes.

A handcranked grinder like pic related is piss cheap too, and you can sometimes get them even cheaper in second hand stores. It will outlast you.

It's pork and lard based spiced with coriander, ginger, nutmeg, allspice, and salt and pepper of course. Not a very spicy sausage, though, it tastes mostly of the meat.
We butcher a pig once a year, usually shortly before Christmas, and make a crapload of medister sausage. The casing is pig's gut, naturally.
