Why does Michelin give out stars to restaurants all over some countries but only to a handful of cities in the US? I've been to quite a few restaurants in rural areas that is far better than many Michelin star restaurants.

Oil
Cook for 8 to 10 hours on low
1hour before end
Add a dark roux made of
half cup flour 1/4 cup and paprika mixed , lots of sunflower oil added slowly.
