Homemade mayonnaise should not even be considered the same condiment as the bottled sludge. I always hated mayo because it tasted like a mix between oil and nothing, but ever since I started making my own I've had to stop myself from putting it on literally everything; it's so quick to make, just 3-4 mins tops. Here's my recipe taken from kenji
- 1 egg
- 1 tbsp lemon juice (i use from bottle)
- 1 generous teaspoon dijon mustard
- 1 big garlic clove
- Couple squirts of sriracha (not the oversweetened asian shit)
- Lots of s+p
- enough neutral oil to make up to about 250-300mls total, blitz with stick blender.
Any mayobros?
