The problem with this is that most people either cant afford fish or are "out of range" for easy fish taco. Most people just go for a carne asada taco Tijuana style as the staple. I would say that carne asada fries is the best California dish but that's a bit too limited to the south. Really if you want "Californian" you just need to slap some avocado on it and call it a day.
