Browning the meat. Trying to really get the fatty side roasted here but you want to brown all sides anyway. If there's an easier way than turning each piece with tongs I haven't found it.

Roughly sliced onions. I don't like a very fine chop on them for something that gets simmered for 3 hours.
Thought about browning them in a pan on the side but I'm actually very lazy.

It's coming along. It does look a bit boring without carrots in it, though.
I have some button mushrooms and half a jar of pickled pearl onions I'll add towards the end. The other half of the jar having been lost to attrition.

These looked a lot better than they tasted. The loaf tasted a bit better today for some reason. It smelled breddy gud if nothing else.
