In none of these places will you ever find decent "fish & chips".
If you don't have a proper dedicated range fryer, you simply cannot make either fish or chips that isn't some pale imitation.

Some restuarants might be able to do it, but that's a hell of a long shot as these things are like 10k+ (£) and the vast majority of them won't drop that kind of cash unless they're specialising in fried foods AND doing little else but fish and potato. And this is in the UK.
In the US virtually no-one is going to do that. And if they did they'd more likely use it for meats and fries, which need a higher temperature and wouldn't cook the fish/chips properly. And waiting for a range to heat/cool to the right temperature is time that isn't spent making food/money.

In the upper midwest fish fry as its called is super common, pretty much every bar and restaurant offers it on fridays and its essentially the same thing as the british version but with better fries (and served with a side of rye bread and coleslaw)

The best fish and chips wouldn't be made with lake fish, but rather halibut, and barring that pollack or haddock. Cod is traditional but it has some overfishing issues and subbed by other fish often.
Keep trying it, and look for a place that is doing halibut. The magic of great fish and chips is about it being right out of the fryer and the malt vinegar and cold beer. It's a marriage of flavors and textures.

First of all, you can get Fish and Chips fucking everywhere.

Second of all, it's pretty good, but I can't imagine lusting after it. It's a pretty basic pub food-- fried fish and french fries. By its virtue it's pretty simple and blue collar-- you don't fance it up with special vinegar or anything, and it's one of those foods where the high end 'deconstructed' versions you get at three dollar sign restaurants is actually worse than the cheapo version you can get hot at some pub.

I went to America twice, once in New York and an Irish bar advertised Fish and chips and the other Las Vegas.
I thought the Irish place would be good (it had fucking green and shamrocks everywhere, nothing like an Irish pub). It was basically ASDA frozen fish fillets done in the oven with weird yank chips (like a cross between wedges and fries somehow).
Las vegas was the same but served with fries.
