When it comes to drinks 20% is bullshit, youre at a bar not restaurant... tipping a dollar on a beer pour is fantastic, tipping a couple on a cocktail is good stuff! You tip based on the service not the contents of your beverages... with standard quality drinks 20% usually brings you to great tipping rates, but its absurd to expect 20% just because you sold a $500 bottle of champagne instead of $40

It's way easier in the better restaurants from my own experience. I started out serving stale coffee in shitty family restaurants, went through a whole bunch of restaurants and bars that tried to appeal to all sorts of demographics, and am currently working at a pretty high class casino restaurant where the cheapest dish is just under 80€.

The lower down the totem pole you go the more you have to deal with shitty customers. Sure we still get the occasional rich fuck who thinks my female colleagues will "serve" him if he invites them up to his hotel room and then gets pissed when they tactfully avoid his advances by laughing it off and changing the subject, but the vast majority of people who go to these type of establishments will not want to make a fool out of themselves.
