Aside from the absolute basics (pasta, eggs, etc.), what are the fundamentals of cooking good food? What are the basic dishes I should be able to make? What are some essential/fundamental techniques?

You just need to start doing it.

Different cuisines and even dishes in the same cuisine are so fundamentally different between themselves there is no such thing as an "all cooking essentials", unless it's a endless list.

Learn safety (How to use all knifes, stance, how to put out an oil fire, etc), and when you start learning recipes you will see that you will need to learn some techniques to finish them (sauté, slow cooking, etc). Maybe you will then go for pastries, or sweets... Just start your journey and pile up knowledge, the vision becomes cleared as you go.
