I was the GM of a fine dining restaurant, a position I held for over a year. I got the job when I was 23, having worked my way up through the industry over the previous two years (started as a busboy for a hotel restaurant, then as a server, then as an FOH shift leader). I was still pretty inexperienced but the owner hired me because of my attitude and professionalism, and promised to train me until I was ready to fully assume the responsibilities of the job. Fast forward two months, the owner ditches me to open a new concept and fires the marketing director because she failed to do some menial paperwork (I got stuck doing her work ON TOP of mine because I was "good with computers"). So now I'm completely on my own, dealing with the biggest asshole sous chef/kitchen manager I'd ever met (didn't help that he had a drinking problem) and a staff of servers that consisted mostly of theater school brats. I consistently worked 14-hour days on salary, and the stress of the job started to affect my mental health and relationships. The owner hired the executive chef's wife as the company's operations manager (OM), and she basically ignored all my efforts to sit down with her and ask for guidance (until I was basically in tears, about to quit because of all the nasty shit the sous chef would say to me) and she instituted a wine program that made no fucking sense given the cuisine the restaurant specialized in. Anyway, we end up needing to hire a new bar manager since ours was leaving to do some traveling. So one night I'm on Craigslist checking if the OM has posted a listing for the position; I find it, and in the listing it includes a list of responsibilities that I, as the GM, already do. So I send the OM an e-mail asking if she has time to sit down and discuss my role and if she has any feedback for me. We meet the next day, and I confront her about the Craigslist ad: she basically admits to going behind my back to fill my job with someone else without consulting me, and says that I'm being moved to "assistant manager/bartender" which of course comes with a pay cut ("you'll be expected to make up for it with tips").

I lasted two more months at that shithole before I got fired because "things weren't working out". In that time, the asshole sous chef basically stopped showing up to work because he fucked up his arm doing something on the job and then tried to file a workman's comp. The restaurant closed four months later and got re-concepted as a casual ethnic eatery (which was hilarious because they were within a two block radius of three other casual spots with the EXACT SAME CUISINE).

So that's basically a summary of the worst year of my life working in the restaurant industry.

Except both The Onion and The Prince are satirical in nature. I've worked in enough establishments to know that you don't need to be a tyrant to be an effective manager, and anyone who believes otherwise is contributing to an absolutely toxic industry culture.

Good management involves:

1) Knowledge
2) Superior work ethic
3) Ability to communicate

Maybe being a dictator or an asshole works for some people but it is not a sustainable way of doing business, and employees WILL see through it eventually. If I could go back in time and give myself any advice in that situation, it would be to immediately go to the executive chef, tell him his kitchen manager was an alcoholic and an asshole, and threaten to quit if the problem wasn't handled. And I would also tell myself not to be afraid to quit, because my experience was NOT normal and dozens of other restaurants around my city would have been happy to have me given everything I'd learned.

There are approx. four major independently-owned restaurant groups in my city. Only one of them is known for having a chef who's kind of a dick but in his defense his main concept has 3 Michelin stars so he's probably more of a perfectionist than a dick (also he beat fucking cancer a few years ago).

I'd work 50+ hours a week. Everything smelled like the damned place. It was always on my skin, in my hair. Especially when the grease trap was acting up. Opening up a sealed bag of pepperoni is like having a dog fart in your face.

Back in the 80s I got a job at age 14 as a busboy in a Kettle restaurant (24 hrs like Dennys). Got taken advantage of by slimy managers -- super low pay and ridiculous hours. I remember it being 4AM and trying to change the words on a 50 ft tall sign thinking that I have to go to school in three hours for band practice.

Mandolin took my thumb down so far that I just narrowly missed needing a skin-graft. And all because the fucker malfunctioned (aka broke).

I also had some fucktard put a heavy sixth pan overtop the vent, upside down, for the steamer so when I opened it during service it blasted my arm with compressed steam all the way up past the elbow. I worked one handed the whole fucking day with the other harm in a giant bowl of cool water because I couldn't get a hold of my boss or call anyone in. On the upside, when the Executive Chef got back she gnawed on the three morning crew fuckwits with threats you would not believe. It sucks working alone with one-hand, but at least some people got put back in line, and I didn't get any scarring out of it.
