"American Goulash" I'd forgotten about this dish for a few decades and made it as a laugh. And my kid thought it was great and has asked for it often since then. It's so generic I don't think it had a name when I was growing up. Look up the Emeril recipe for the details. Makes great lunchbox food.

It was a thing when I was a child, but my mom never made it. We were a little more refined than the hamburger helper kind of things, but best friend's mom made it and called it "jamaican goulash." Despite having no chili in it, it's also called "chili mac." I have also heard chop suey. Mom mom did by the lachoy veggies and crunchy toppings and make hamburger "chop suey" that way, but not with pasta, just a side of rice. My Miami elementary cafeteria manned by southern black lady cooks, who actually got veggies from the local farms, and who made everything from scratch, from collards to soft dinner rolls, made it in a big casserole topped by about 3/4in of that mealy but rich government cheddar melted on top and it was quite popular with the kiddos, like almost their favorite day if it was on the menu (the big giant hawaiian style rolls were so good too).

Having just made a huge pot of dirty rice, I will say that this kind of thing freezes well and for myself, brings back some comfort food memories.
When making something like this, buy the leanest sirloin, 7-10% if you can. No oil in pan, just better for your overall texture to the veggies cooked along with it. Try making it with sliced stewed tomatoes as well as dicing your own whole (canned) tomatoes, for different textures.

Not at all. There's no italian herbs here. It's got the clean rich canned tomato flavors of stewed tomatoes that are almost barely cooked, a tartness and firmness with each bite, maybe a hint of celery or garlic or bay leaf depending on recipe, but no basil or oregano. You'll find crazy recipes that include worchestershire or soy sauces, sometimes. Anyone who italianizes dunnos what they are doing.
