hey /ck/ tell me how badly i fucked up here
i wasnt really thinking and just chucked random shit in
heres what i did:
* Salt rub beef roasting rump (think i used too much salt here).
* Brown/sear sides of beef in pan (using sesame oil) then chuck it in slow cooker.
* Deglaze pan with red wine.
* Add quite a bit of garlic, little bit of ginger, little bit of mustard.
* Add spices: small amount chinese 5spice and oregano, decent amounts of rosemary, thyme, basil, chilli powder, chilli flakes.
* Add decent amount of soy sauce (used some dark soy sauce too because i didnt have enough of regular).
* Add some chinese rice wine.
* Add a bit of siracha sauce.
* Add beef stock.
* Pour sauce over beef in slowcooker.
its cooking now and it smells really strange
i'm worried

It's the odd mixture of Asian and European flavors you're using. Most of the flavor will be in the braising liquid, however, so if that ends up tasting strange, you can just focus on making things with the braised beef itself. Next time, resist the urge to throw a bunch of random shit in the pot. Execute some more classic flavor combinations before you branch out and go crazy

Sesame oil should mostly be used as a finishing touch to a dish. Where you prepare the dish, and after sampling you can add a small amount.
