Take sucuk (Turkish leek-flavored sausage), slice it, fry it, crack several eggs, beat 'em, and mix 'em together.
Natto with egg.
Mix natto with egg using a pair of chopsticks. Add shoyu or mustard. Serve on rice.
Tortilla de patata
Dice up a potato and an onion. Fry them till soft. Whisk some eggs and pour them over the potato-onion mixture. Sprinkle a bit of salt and parika if wished.

I make egg souffle frequently. Pronounced "sou-ful" to be cute, because it's not really a soufflé at all, but just baked eggs that puff up a bit as they cook.

4-6 eggs, about 1/2 cup milk or half and half, some cheese if you like, some chives or other soft herb if you like, salt and pepper to taste. Beat well (about a minute with a fork or whisk), butter a deepish dish (I use a big souffle dish for this, but anything where your egg mix will be 2-3" deep at least will work), pour the eggs in, bake at 400 F for 20-30 minutes, or until done to your liking. You can give them a jiggle or cut the center to gauge how cooked they are.

This is a super excellent recipe for when you want to have your hands free for 30 minutes while making breakfast. I often make it with oven roasted hash cooked next to it for an easy brunch that means I can drink mimosas while it's all cooking, and impress my friends with huge poofy eggs (though they fall quickly!).

3 eggs
1 diced tomato
1/2 diced onion
2 heaping tbsp diced bacon or ham
oil or butter
chives, salt pepper

heat oil or butter in skillet, lightly fry diced onion and ham/bacon on medium heat until onions are translucent. Meanwhile crack and whisk eggs, add diced tomato.

When the onions have beccome translucent add egg/tomato mixture to skillet and let it cook at low to medium heat. Stir slowly to get large curds. Season with salt and pepper to taste towards the end, dont overcook it it so it is all dry.

One of my favourite meals, so much better than the shitty plain scrambled eggs I see posted here so often. The tomaatoes make a huge difference. Make sure you get really good, intensive tasting ones, like cherry or cocktail tomatoes

Serve with fresh baguette, toast or mealy buttered boiled potatoes.
