ugh when a knife is dull I get such negative asmr, I have autism and OCD so I need that satisfying feel when I slice - so I only use knifes just after I sharpen them

it's not like I am a chef, or couldn't make the exact same meal with a dull knife, it's just that after buying my 1000$ japanese, single bevel damascus (folded, hard carbon steel) the simple act of cutting has to justify the price. Very few people take care of shit that is not their own and that they didnt pay for ... and sometimes not even of that. I regularly sharpen my mothers knives and more often as not I see her the same day, cutting cake on glass platters or a stick of butter on the granite countertop with the newly sharpened knife. I take a look at the edge and it is totally fucked. Drives me bonkers.

Tip: get a belt sander/wheel grinder combo device, with a fluffy cloth wheel with buffing compound instead of the grinding wheel. I can get a knife phone book paper cutting sharp on one of those in literally 20 seconds. If you know what you're doing the belt sander wont fuck up the tempering either. Just be very quick, use super light pressure and use a rough grit (80) to prevent overheating.

That's nearly every knife in my house, but, to be fair, I have one knife in my kitchen whereas my roommate has dozens. He also has one of those shitty knife boxes. It has a cleaver which I swear is less than a pound. I tried using them once to cut onions and peppers. Never again.

The thing is I'm a chef, and my only kitchen knife at home is a six-inch deba that's the wrong hand for me that I got for free from another chef who wanted an upgrade. The thing keeps a blade like only a cheap ass knife you find at an Asian market can. It's heavy as shit, and it rusts at rusts at the sight of moisture. Still, debas are precious for most prep work, and I'll probably have it 10 or 20 years from now. Nice not addressing why I called you stupid and moving on to something new. The store I go to will match the price of anything they carry to other stores. Except meat and deli. The only other store that has a proper deli and meat section is actually not too bad but not as good as the one I go to. Its also bullshit bagging your own groceries and dealing with an obviously inferior store. Not as clean, always short staffed, standing in line forever... I don't mind an extra dollar for a steak if it's better. Plus the store I go to carries a much larger selection of everything. They have a fantastic salad/wing bar at lunch that has some of the best chicken wings you can get anywhere. Oh and did I mention everything is absolutely spotless and all the employees are friendly and will stop whatever they're doing to show where something is or tell you about something new. It's a union grocery store and everyone gets paid a living wage. Oh amd their produce is as cheap as anywhere else but better and fresher and presented in a much better way. They also have a flower shop and a chocolate shop where I buy my mom and gf shit from time to time. Oh and they have a chest of bottled ice water when you walk in that's free as well. When Wal-Mart started selling groceries they would sell them at a loss trying to drive the other grocery stores out of business and they only got the dregs from the town to go there. The other stores suffered but not the one I go too. I think the main reason they're able to achieve this is that it's very far from a bus stop so blacks, white trash, and huge families of mexicans all talking gibberish don't go. That's what happens when you use a "steel" aka "honing rod" too much without ever using a stone. You see the same thing if you ever look at antique carving knives--repeated use of the abrasive or serrated steel rod removes metal from the edge.

Now, you might ask yourself why does the blade only get concave near the handle rather than wearing uniformly along the entire edge? Operator error. When people use a steel they don't realize that their mechanical advantage decreases as you go towards the tip of the blade. In other words, the length of the steel and the blade mean that the steel presses harder at the start of a stroke (near the heel of the blade) and as the point of contact travels towards the tip of the knife the pressure is less and less.

Yeah those ordinary grooved steel are nasty. They are really just files that shave off metal. They leave a shit edge full of nicks and burrs that gets dull again very quickly. It's shocking how many people don't know shit about cast iron pans.

I even read a story where a worker's restaurant didn't take care of their cast iron pans, and was just going to throw them out. I think it was about $200 worth of cast iron cookware. The guy asked for them since he collected iron scraps (he just wanted the pans). The boss said "go ahead and take them".

I wish I still had the pic, but it was very telling: A buddy of mine was on safari in africa and the workers who skinned & butchered the animals all had these strange-looking knives. They had a handle like a generic western Chef's knife, but the blades were these tiny little triangles that were no more than 2 inches long. It turns out those WERE full-size chef's knives, they had simply been sharpened so many times over the years there was only a tiny stub where there once was a 10" blade.
