I never had it but i heard its creamy with little flavour and smells awful.

It has to be very fresh or it stinks. It has the texture of tofu. It tastes like tofu if tofu contained animal fat and was vaguely meaty. It can be ok, cooked and then dipped in sauces.

Veal brain is the best one. All others are way too gamey.

I actually orefer pork to beef, but pork innards are generally way too strong for me. Liver is another example.

I've only ever been able to afford sheep brains but I imagine they would taste similar, if cooked properly.

Creamy texture and a taste similar to shellfish imo

Mexicans have these side dish called sesadillas wich is basically a deep friend (in lard) taco made of brains, sound gross but tastes awesome.

I tried it a few weeks ago when I was in Guadalajara
