Yeah I think they're the best food on earth, and also have nice macros nutrient wise if you aren't drowning them in sugar.

>Eggs for protein, nutrients
>(fortified) flour giving you them carbs (use good quality flour) (You can use wholemeal flour too, or gluten free: coconut/ almond flour, but you have to change the ratios a bit)
>Milk, also rich in nutrients (free range organic whole if possible - the very best would unpasteurised but it's harder to get a hold of especially as it's illegal to sell in some European countries)
>Little bicarbonate of soda to make it rise a bit, also very good for you and said to be very alkaline, some people have even said a teaspoon of baking soda a day is cancer preventative
>Add some caster sugar if you don't care about sugar being shit for you

Pancake for one:

Olive oil in your frying pan, put it on low heat

Empty into a bowl in order:
half a cup of flour
just under half a teaspoon of baking soda
pinch of salt
crack one whole egg into it
half a teaspoon of olive oil
Mix slightly
Fill just under half a cup of milk

Turn your frying pan to just under medium (where you can only slightly hear the gas feed)

Continue mixing your mix (a fork or a spoon is fine, just as is any old bowl) and slowly add all the milk.

Don't mix it until all the lumps are out, you want it to be very slightly lumpy for the ideal pancake consistency.

Pour it right from the bowl (fast) into the middle of your frying pan. It'll spread out.

When do you know it's ready to flip? Watch for bubbles, and wait until you start to see the bubbles reach the edge. Flip? Yeah, if there's a bunch of bubbles that don't just fill with mix when they pop, then you know it's ready to flip. Also if under edges are brown. Give the other side a minute or so, then wham it onto a plate and add whatever extras you want (I find real butter and real maple syrup to be the best). Eat with a knife and fork.

I can't begin to tell you about the satisfaction that comes from getting perfect pancakes. Every time you make pancakes, you improve a little. Eventually you'll reach perfection. Personally I've improved significantly at making them since I started just a month and a half ago, and it has even improved my self esteem a good bit. Sourcing great ingredients and cooking them just right will give you better quality food than even a michelin star restaurant, and imho pancakes while seeming simple are the best food on earth.

Some people say you need to leave your mix in the fridge for 30 minutes to 'set'. It's bullshit imho. Your pancake ingredients begin reacting with each other as soon as you mix them, so it's ideal to cook them immediately so that you're cooking with that reaction. It's up to you of course to find your own way of doing it, so feel free to experiment.

I feel leaving food to oxygenate further by stewing degrades it and makes it less good for you. Only exception off the top of my head is oats, which should always be left in water overnight before cooking to remove phytic acid.

Want protein pancakes? add an extra few eggs, or some whey powder.

Fat cunt with a sweet tooth? Add chocolate drops and banana to your mix, or season it once cooked (or during cooking) with whatever sweet stuff you want. Pancakes are so customisable it's crazy (although personally I just stick to butter and maple syrup, for now)
